Mexican club taco?
I was hungry one night and rummaging through the refrigerator. I found some bacon. A little bit of turkey breast and a tomato. My first thought was – this is the start of a club sandwich! And then I found we had no bread.
Hmmm. What now?
I found some street taco size flour tortillas in the bread drawer. And we always have Mexican spices on hand. And so I went to work.
I cooked and mixed and created a taco inspired by the Club Sandwich.
Here’s How to make the Mexican Club:
First, cut the bacon into one inch pieces. Add a little olive oil to a cast iron skillet and cook the bacon. About half way through cooking, add the spices for Mexican flavor and stir.
When the bacon is nearly crisped, stir in the turkey breast and cook until it’s heated through. Stir in the salsa verde.
Warm some tortillas by laying them on the hot cast iron skillet until they are soft.
Put some meat in the tortillas.
For garnish, offer radishes, lime wedges, and sliced green onion.

What to do when you have club sandwich meat and no bread. But you do have tortillas...
- 4 slices bacon
- 4 to 6` oz. turkey breast or thigh meat
- 1 Tablespoon olive oil
- 1 Tablespoon chili powder
- 1 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
- 2 Tablespoons salsa verde
- 4 small flour tortillas (street taco size) - can also use corn tortillas
- 1 lime, cut into four wedges
- 4-5 large radishes, sliced
- 2-3 large green onions, sliced
