One week into a brand new year!! It’s been pretty good for me so far – how about you? Did you make resolutions? I’m working on a plan for posts for this new year. I’ve decided it’s going to be a great year!

I have informational posts lined up – and some easy, healthy recipes. I’m trying to eat more plant based foods and a lot less red meat. And I’m hoping the recipes I create will reflect that.

    Happy New Year! We also try to be “gluten-free” but not a crazy person about it (just save the gluten for donuts later ~ haha). I’m lactose intolerant, so only use plant-based “dairy” products and that makes a huge difference. Hubby lost 60 pounds in about 6 months (yes, he needed to) and told everyone “it just came off and he didn’t know why” ~ haha. Maybe b/c he was eating almost gluten-free and dairy-free and didn’t even notice? Easy enough to make substitutions in the recipes we love and they taste just about the same. The 3 posts for desserts I put up are what we “save” our gluten for (lol) and the 2 main dishes are a couple of ones that I make GF.
