Cheese balls are popular at most gatherings, but how to make it festive for Thanksgiving was my dilemma. Then it came! Bacon! Who doesn’t like bacon!
This cheese ball is full of tasty cheeses and chunks of bacon – and goes fantastic with homemade cheese crackers too!
How to Do it:
Process the first five ingredients in a food processor just until it is mixed, but not doughy.
Place the cheese mixture on plastic and wrap. Refrigerate 45 minutes to an hour.
Form a ball with the cheese and roll in the walnut pieces, making sure to cover all sides. Place the cheese wedge on a toothpick, then carefully lace up the pimento. Put the head on the front of the ball.
Gently break the bacon slices in half. Using a butter knife, put slits in the back of the ball and slide the bacon slices in, pushing the cheese gently in place to hold it. Place all the bacon slices in a fan shape.
Serve with crackers.

- 8 oz. cream cheese
- 1 cup extra sharp cheddar, shredded
- 1 cup pepper jack cheese, shredded
- 2 Tablespoons dijon mustard
- 1/2 cup cooked bacon, chopped
- 1/2 cup walnuts, chopped
- 4 slices cooked bacon, cooked crisp
- 1 wedge cheddar cheese, (the head)
- 1 slice pimento (the waddle)
