I love beets – and they are so good for you.
Beets contain compounds that lower blood pressure and have anti-inflammatory properties. Not to mention they taste delicious!
Here is a super easy way to make them. Just wrap and roast – that’s it!
Here’s How to Do it:
Wash the beets and potatoes and wipe dry.
Lay each beet on a sheet of foil. Drizzle with olive oil.
Wrap each beet and potato with 1 to 2 cloves of garlic and
wrap tight.
Bake at 350° for about 2 hours or until they are fork tender.
Remove from the oven and allow to cool slightly.
Use the foil to wipe the beet skins off.
Slice the beets and toss them with a little bit of butter and salt.
Also works great with potatoes and sweet potatoes and makes a great side dish to roasted chicken (you can cook them at the same time!)

Just wrap and roast. That's it. When they're done, slice and add seasoning. It's a healthy and delicious dish!

- 1 very large golden beet
- 8 whole cloves garlic, peeled
- 4-5 teaspoons olive oil
- 2-3 teaspoons butter
- Salt and Pepper to taste
