I love lemon chicken but it’s just too hot in the summer to turn on the oven. Enter the grill. It’s pretty easy to do too. Just marinade the chicken overnight, grill it and enjoy! I grilled some potatoes at the same time. Add a veggie – it’s dinner!
Here’s How to Do it:
Mix all the ingredients except the chicken in a zip lock bag. Squeeze to mix all the ingredients. It’s really important to use fresh squeezed lemon juice. All of the pre-bottled have been cooked to come degree to preserve them. They loose that brightness of the fresh stuff.
Cut the chicken into pieces and place in the bag. Squeeze out all the air and refrigerate over night.
Heat the grill to 350°.
If you’re grilling potatoes, cut them in half, spread some olive oil and sea salt on all sides and add them to the top shelf of the grill at the same time.
Squeeze a little lemon on the chicken and add some salt and lemon pepper to the chicken,
then place it on the grill and cook for about 20 minutes on each side, or until chicken reaches and internal temperature of 185° and juices run out clear.
Remove from the grill and let it rest for about 5 minutes.
Serve with grilled potatoes and a veggie. Delicious!

A summer take on the classic, but you don't need to use the oven!
- 1 whole chicken, cut into piece
- 3/4 cup fresh lemon juice (make sure you use fresh)
- 2 teaspoons lemon pepper
- 1/2 teaspoon garlic powder
- 1-1/2 teaspoon sea salt
- 1/3 to 1/2 cup water
- 4 whole potatoes - cut in half diagonally
- olive oil
