Chorizo and Refried Bean Casserole

We had tacos the other night and I wanted a side dish that was a little different. I had a some chorizo and a can of refried beans, and a few other ingredients so I set out to experiment. And it came out pretty good too! A total hit with my family! Bet they will be with yours too!

Here’s How to Do it:

This recipe couldn’t be any simpler.

First, the chorizo. It must be the Mexican variety. But what is the difference you ask?

Spanish chorizo is made of pork with seasonings like paprika and wine. You will see it most often in the cured form, sort of like salami.

Mexican chorizo is made with chilis and vinegar. It is sold raw and in plastic rather than casings.

Start by removing the chorizo from the plastic casing and cook it until it looks crumbly and the fat is rendered. If there is a lot of fat, pour some off, but keep about 3 Tablespoons.

Add in the beans and chilis and mix well.

Place in an oven proof casserole dish and top with the cheese.

Bake 350° for about 20 minutes, or until it’s heated through and the cheese is starting to brown.

Remove from the oven and allow to cool slightly, then serve.

It’s so good, your tacos will become the side dish!!

Super easy dish that goes great with tacos!!

Ingredients
  • 2 14-oz cans refried beans (I used Rosarita green chili and lime)
  • 2 9-oz packages Mexican chorizo (I used beef, but pork works too - try them both!)
  • 1/4 cup diced, roasted green chilis (in a can)
  • 1-1/2 cups grated, extra sharp cheddar cheese
Instructions
  1. In a heavy skillet, cook the chorizo until it is slightly crumbly and much of the fat is rendered.

  2. Stir in the beans and chilis and mix well.

  3. Place in an oven proof casserole dish and top with the cheese.

  4. Bake 350° for about 20 minutes, or until it's heated through and the cheese is starting to get brown and bubbly.

  5. Remove from the oven and allow to cool slightly, then serve.
