Chicken and mushrooms roasted together. The juices from the meat soak into the mushrooms giving you a rich and earthy flavor.
Slice up the mushrooms and shallot.
Place the mushrooms in the bottom of a baking dish. Drizzle the olive oil over the top.
Add the shallots, then the chicken. Sprinkle it all liberally with salt and pepper. Cover and cook at 400° for about 15 minutes.
Remove the cover and reduce heat to 325°.
Bake for another 45 minutes or until the chicken has clear juices running out and the skin is brown and crisp.
Remove from the oven and allow to sit for about 10 minutes before serving.
