Leftover Turkey Hash
We smoked a turkey a few weeks ago. There was so much we froze a large part of it. But you can only eat so many turkey sandwiches! So for dinner we put together this delicious turkey hash. You can use any leftover turkey (or even chicken or pork). It was heavenly. Add a side salad and it's dinner!

Ingredients
  • 2 cups chopped, cooked turkey meat
  • 2 cups cubed potatoes (about 1 very large), cut into 1/2 to 3/4 inch cubes
  • 1 cup onions, chopped
  • 2 cloves garlic, crushed
  • 1-2 Tablespoons olive oil
  • 1 Tablespoon worcestershire sauce
  • 1/2 cup water
  • 4 oz jar of sliced pimentos
  • salt and pepper to taste
  • 1 large egg, per person (optional)
Instructions
  1. Heat the oil in a cast iron skillet (actually any skillet will do, but I love my cast iron). Add the potatoes and cook on medium heat until the cubes start to brown, turning occasionally.

  2. Next add the water, cover and simmer until the potatoes are tender, about 15 to 20 minutes.
  3. Add the onions and garlic and continue to cook until they are soft and tender.

  4. Next, add the chopped turkey and heat on medium until everything is hot all the way through. Stir in the pimento and Worcestershire sauce. Salt and pepper to 
  5. Serve hot with (or without) an egg.
