Sautéed Summer Squash and Chard

A perfect combination of summer vegetables you can grow yourself!

Ingredients
  • 1 large summer squash Use any kind. I used a yellow scalloped summer squash
  • 1 cup swiss chard, chopped
  • 1 to 2 teaspoons olive oil
  • Salt and Pepper to taste
Instructions
  1. Start by washing both the squash and the chard. Set them in a strainer to dry.

  2. Heat a heavy skillet, like cast iron, over medium heat. Lightly coast the bottom of the pan with some olive oil.

  3. Cut the squash and the chard into small pieces. 

  4. Add to the squash pan. Lightly sauté until the squash is starting to soften.

  5. Next, add the chard and continue to cook until it's soft and bright green.

  6. Add salt and pepper to taste and serve hot. Simple to make and simply delicious!
