With just a few ingredients and a pot of pasta, you have dinner in about 30 minutes.
Start by cooking the pasta according to the package directions. I used a fettuccini noodle, but any kind of flat noodle works great. Be sure to save about 1/4 cup of the water from the cooked pasta, you'll need it for the sauce.
Now, in a medium sauce pan, combine the meatballs, mushroom soup and gochujang paste and heat on medium low. Continue heating until the meatballs are heated through.
Stir in the quark and pasta water. Simmer and stir until it's all well blended. Serve hot over the pasta!
Quark is a fresh cheese that is made from soured milk. It's creamy and tart! If you can't find it (I buy mine in a local German market), puree equal parts of cottage cheese and Greek yogurt together.
Gochujang paste is red chili paste that has been fermented and is often found in the Korean foods section. If you can't find it, Thai chili paste can be substituted (but the gochujang has better flavor).
