Roasted Cabbage Steaks

A delicious way to serve cabbage. Even a non-veggie eating family will like this one!

Ingredients
  • 1 medium head of green cabbage
  • 1 to 2 leeks, white part only
  • olive oil
  • fresh ground pepper
  • sea salt
  • 1 cup Thousand Island Dressing
  • 1/2 teaspoon horseradish
Instructions
  1. Preheat the oven to 350°

  2. Slice the cabbage into 1/2 inch to 3/4 inch thick slices.

  3. Place the slices in a single layer in a large baking dish that has olive oil drizzled in it. Drizzle more oil over the cabbage and add salt and pepper to both sides. 

  4. Slice the white part of the leek into 1/4 inch slices. Lay them over the cabbage slices with just a little bit more olive oil.

  5. Place in the oven and bake for about 10 minutes. Gently turn the cabbage slices and return to the oven until the cabbage is soft.

  6. Meanwhile, mix the horseradish with the dressing. Warm it up slightly.

  7. Serve the steaks with leeks on top and some warm dressing over the works.
