Chorizo and Refried Bean Casserole

Super easy dish that goes great with tacos!!

  • 2 14-oz cans refried beans (I used Rosarita green chili and lime)
  • 2 9-oz packages Mexican chorizo (I used beef, but pork works too - try them both!)
  • 1/4 cup diced, roasted green chilis (in a can)
  • 1-1/2 cups grated, extra sharp cheddar cheese
  1. In a heavy skillet, cook the chorizo until it is slightly crumbly and much of the fat is rendered.

  2. Stir in the beans and chilis and mix well.

  3. Place in an oven proof casserole dish and top with the cheese.

  4. Bake 350° for about 20 minutes, or until it's heated through and the cheese is starting to get brown and bubbly.

  5. Remove from the oven and allow to cool slightly, then serve.
