Taco Meatloaf

The quintessential comfort food. Tacos and meatloaf combined into one easy meal.

Ingredients
  • 1 pound ground beef
  • 1 large egg
  • 1/4 cup unseasoned breadcrumbs or cornbread crumbs
  • 1 package taco seasoning
  • 3 Tablespoons canned, diced green chilis
  • 3/4 cup shredded pepper jack cheese
  • 1 7-oz can Salsa verde (green salsa)
Instructions
  1. Start by mixing the meat with the bread crumbs, egg, taco seasoning and 2 Tablespoons of the green chilis.

  2. Mix it well. I like to use my hands and squeeze the ingredients together.

  3. Cover and let it rest for about 30 to 45 minutes in the refrigerator.

  4. Lay about 2/3 of the meat in the bottom of a lightly greased loaf pan, creating a well in the center.

  5. Fill the well with 1/2 cup of the cheese and the remaining 1 Tablespoon of green chilis.

  6. Carefully lay the remaining meat over the top and seal the piece with your fingers to keep the cheese from leaking out.

  7. Pour half of the green salsa over the top and the remaining cheese.

  8. Bake at 350° for 35 minutes.

  9. Remove from the oven and pour the remaining green salsa over the top and bake an additional 20 to 25 minutes. Make sure you close the oven when you take the loaf out to add the sauce. Otherwise the oven cools down and the meatloaf will not bake evenly.

  10. Remove from the oven and let rest for 10 to 15 minutes.

  11. Serve hot with a wedge of lime, Mexican rice - some corn - and maybe a spicy jalapeño on the side!
