Mushrooms and Pork in Garlic Butter

Pork and garlic simmered in butter. A creamy delicious sauce goes with pasta or rice.

Ingredients
  • 1 Tablespoon olive oil
  • 1 pound pork shoulder
  • 1/4 cup + 2 Tablespoons butter
  • 1 cup sliced mushrooms
  • 3 to 4 cloves garlic, crushed
  • 1/2 cup chicken broth
  • 1 Tablespoon Plain greek yogurt (do not use fat free)
Instructions
  1. Cut the pork into 1 to 1-1/2 inch cubes.

  2. Using a heavy skillet, heat the oil, then brown the pork on all sides.

  3. Add 1/4 cup of butter to the pan and continue cooking.

  4. When the butter is fully melted, add the garlic and mushrooms and sauté until the mushrooms are starting to sweat.

  5. Stir in the broth and reduce heat to a simmer.

  6. Cover and continue to cook for about an hour or until the pork is fork tender.

  7. Uncover and bring to a boil.

  8. Reduce heat to low and add the yogurt and remaining butter. Continue to simmer gently, stirring often, until the sauce is thickened.

  9. Serve hot over pasta, rice or other grain, spooning the sauce over it all.
