We love oysters at our house. I enjoy Oysters Rockafeller, but I wanted something so much more simple. The ingredient list looks a little lengthy, but if you take the time to gather everything up first, you'll whip right through the prep and have everything put away in time to sit and relax with your meal.
Start by cutting the bacon into small chunks.
Next mince the shallots and garlic, setting them aside.
Grease individual au gratin pans with 1/2 tablespoons each of the butter by simply rubbing the stick around focusing on the corners.
Melt the remaining butter and sauté the bacon until it starts to cook gently. Add the garlic, shallots and spinach. Continue to cook until everything is soft and fragrant. Add salt and pepper to taste.
Place the vegetable mixture into the dishes. Wipe out the pan and lightly and melt the butter in the pan.
Gently mix in the panko crumbs, cayenne and parmesan.
Lay the oysters on the top of the vegetables.
Top the oysters with the bread crumb mixture.
Preheat the oven to 350° and cook the oysters for about 15 minutes.
While the oysters are cooking, prep the bread. Melt the butter and add the garlic. Brush the mixture heavily onto each slice of bread and set on a foil covered pan.
When the oyster are starting to get firm, turn the oven to broil and cook for about 10 minutes, or until the top is golden brown.
Also add the bread at this time, but watch it so it doesn't burn.
Serve it all hot and enjoy!
