BALTO - Bacon, Avocado, Lettuce, Tomato and Onion Sandwich

  • 10 t0 12 oz bacon
  • 1 large avocado, sliced
  • 3 to 4 large lettuce leaves (we like iceberg for this)
  • 1/2 large tomato, sliced
  • 2-3 slices onion - sweet white or red
  • 4 slices bread - your choice
  • 2 to 4 Tablespoons mayonnaise
  1. Start by cooking the bacon. I like it crispy but my husband likes it limp. So I start mine first. Don't rush it! Cook it low and slow to render the fat and crisp up the white parts. When mine is about half done, I add his. Be sure to drain it well on paper towels or coffee filters. 

  2. Using any kind of bread (we love sourdough - and I make it alot), toast it lightly.

  3. Spread the bread with mayonnaise then top with the avocado, then the onion, bacon and lettuce. Top with the bread.
