Chicken and Rice Casserole with Broccoli and Cheddar

A fast, healthy meal that can use leftovers or be made ahead.

  • 1 cup cooked chicken, cut into small pieces
  • 2 cups frozen broccoli (do not thaw first) you can also use fresh, but blanche first
  • 3 cups cooked brown rice
  • 1-1/2 Tablespoon butter
  • 1/3 cup half and half or whole milk
  • 1 to 2 cups shredded extra sharp cheddar
  • Salt and pepper to taste
  1. Preheat the oven to 350° - 

  2. Mix all the ingredients except the cheese in a 2 to 3 quart casserole dish. Add salt and pepper to taste.

  3. Spread the cheese evenly over the top.

  4. Bake for about 30 to 40 minutes,  or until the cheese is beginning to brown.

  5. Remove from the oven and serve hot.
