Stuffed with a deviled crab mixture, these delightful mushrooms are delicious hot or cold.
Remove the stems from the mushrooms. Set them aside for another use (like chopped in an omelet).
Pour about a teaspoon of melted butter into each cap.
In a large bowl, mix the remaining ingredients, except the chives and parmesan.
Place spoonfuls of the crab mixture evenly into each cap.
Using a microplane, grate the cheese over each mushroom - about 1 heaping teaspoon full.
Preheat the oven to 350° -
Bake the mushrooms for about 25 - 30 minutes, or until the cheese is melted and starting to brown.
Remove from the oven and allow to cool 5 to 10 minutes. Pour the drippings from the pan over the mushrooms.
Sprinkle with chopped chives and serve hot or cold.
