Utah Pastrami Burger

In the 1980's a local fast food place, Crown Burgers, came up with this idea to add some of that deliciously cured beef, pastrami. They topped it off with some thousand island dressing, cheese and all the regular burger trimmings.

Ingredients
  • 2 pounds ground beef (80 to 85%)
  • 1-1/2 pounds thinly sliced pastrami
  • 6 large buns or rolls
  • 1/2 large onion, sliced
  • 2 large tomatoes, sliced
  • 6 slices Cheddar or American cheese
  • 6 large lettuce leaves
  • pickles (optional)
  • 1 Thousand Island recipe
Thousand Island Dressing
  • 1 cup regular mayonnaise
  • 2 teaspoons yellow mustard
  • 2 tablespoons ketchup
  • 2 teaspoons dill pickle relish
Instructions
  1. Start by making the thousand island dressing. You can use store bought, but homemade is better - and it's easy. You simply mix all the ingredients together until they are well blended. That's it! Done!

  2. Warm the pastrami in a steamer with just enough steam to heat, but not cook.

  3. Grill up the burgers. Use a full 1/3 of a pound and cook it to your desired doneness. We like it rare. About half way through, top with cheese. American cheese will melt quickly, but cheddar will take a little bit longer.

  4. Grill the buns until they are warm and toasty.

  5. Spread some thousand island on the bottom of the bun. Lay the bun on top of that.

  6. Add the tomatoes and onions.

  7. Mound on the pastrami and top with some lettuce and a little more thousand island.

  8. Top it with a bun and dig in! Goes great with some homemade fries and pickles too!
