Roasted Beets

Just wrap and roast. That's it. When they're done, slice and add seasoning. It's a healthy and delicious dish!

  • 1 very large red beet
  • 1 very large golden beet
  • 8 whole cloves garlic, peeled
  • 4-5 teaspoons olive oil
  • 2-3 teaspoons butter
  • Salt and Pepper to taste
  1. Wash the beets and potatoes and wipe dry.

  2. Lay each beet on a sheet of foil. Drizzle with olive oil.

  3. Wrap each beet and potato with 1 to 2 cloves of garlic and wrap tight.

  4. Bake at 350 degrees for about 2 hours or until they are fork tender.

  5. Remove from the oven and allow to cool slightly.

  6. Use the foil to wipe the beet skins off.

  7. Slice the beets and toss them with a little bit of butter and salt.

  8. Also works great with potatoes and sweet potatoes!
