Light Pasta Alfredo with Chicken & Spinach

  • 2 teaspoons butter
  • 2 Tablespoons light margarine
  • 4 cloves garlic, crushed
  • 1/2 pound cooked chicken breast (skinless), chopped
  • 2 Tablespoons flour
  • 1 cup 1% milk
  • 2 cups fresh spinach
  • 3/4 cup shredded parmesan not canned
  • 3 cups cooked pasta
  • salt and pepper to taste
  1. Melt the butter and add the garlic. Cook until it’s fragrant.

  2. Melt the margarine then slowly stir in the flour and cook until it starts to brown slightly. Pour in the milk and simmer until it starts to thicken.

  3. Stir in the spinach and the chicken.

  4. When the spinach is wilted, toss in in the pasta and stir.

  5. Add the parmesan and mix until it melts – serve hot.
