One of the most iconic foods of Maine, wrapped in a delicious sandwich roll.
I purchased lobster tails and cooked them on the grill. You can get them pre-cooked or just cook a whole lobster!
Once the meat is cooked, chop it into bite sized chunks and put it in a large bowl.
Mix in all the ingredients except the butter and rolls. You can add a little more mayo if you like it wetter and a little more (or less) cayenne to suit your tastes. Set the mixture aside.
Melt the butter and brush the insides of the rolls with it.
Toast them in the oven or on the grill.
Fill each roll with 1/4 of the lobster mixture, a little shredded lettuce and serve. A lemon wedge is a good garnish with these rich and delicious rolls.
