Slow Cooker Pea Soup

A slow cooked, creamy soup that will fill your tummy and make you feel great.

Ingredients
  • 12 oz dried split peas
  • 2 ham hocks
  • 1 cup coarsely chopped carrots
  • 3/4 cup chopped onions
  • 2 cloves garlic, crushed
  • 2 Tablespoons ham bouillon (see note)
  • 5 cups water
  • 2 teaspoons garlic salt
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon dried thyme leaves
  • 2 teaspoons hot sauce (optional)
  • salt and pepper to taste
  • 1 Tablespoon per person sour cream or plain Greek yogurt
  • smoked paprika (optional)
Instructions
  1. Place all the ingredients into the slow cooker.

  2. Make sure the stock not only covers, but sits above the ingredients (except the ham hocks). 

  3. Turn the slow cooker to high for 30 minutes, the reduce to low. Cook for 8-10 hours.

  4. Pull the meat off the ham hocks and stir. Serve with a little sour cream or plain Greek yogurt on top - and a dusting of smoked paprika if you like! Some warm garlic toast is perfect on the side.

Recipe Notes

I used "better than bouillon" to create the stock base. You can also substitute chicken or vegetable stock in place of the water and bouillon.
