Figs with Gorgonzola and Proscuitto

I found some beautiful figs at the store! I decided to do something different with them for company. I love gorgonzola cheese with something sweet so I decided to make a tasty little appetizer.

Ingredients
  • 10 fresh mission figs
  • 5 Tablespoons gorgonzola cheese
  • 10 strips prosciutto
  • 2 Tablespoons extra virgin olive oil
Instructions
  1. Start with fresh, ripe, black mission figs. Slice them in half lengthwise.

  2. Place about 1/2 Tablespoon of gorgonzola on one half of each fig.

  3. Replace the second half, and carefully wrap in a strip of prosciutto. Place in a baking dish. Continue the process until all figs are stuffed and wrapped.

  4. Drizzle the olive oil over the figs.

  5. Bake at 350° for about 30 minutes, or until the prosciutto begins to get crispy and the cheese is soft and melting.

  6. Allow to cool and serve. Easy and delicious!
