I found some beautiful figs at the store! I decided to do something different with them for company. I love gorgonzola cheese with something sweet so I decided to make a tasty little appetizer.
Start with fresh, ripe, black mission figs. Slice them in half lengthwise.
Place about 1/2 Tablespoon of gorgonzola on one half of each fig.
Replace the second half, and carefully wrap in a strip of prosciutto. Place in a baking dish. Continue the process until all figs are stuffed and wrapped.
Drizzle the olive oil over the figs.
Bake at 350° for about 30 minutes, or until the prosciutto begins to get crispy and the cheese is soft and melting.
