Candy Cane Cookies

Delicious peppermint cookies - a great way to use up those leftover candy canes!

Ingredients
  • 1-1/4 cups white sugar
  • 1/4 cup brown sugar, packed
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 large egg
  • 2-1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Instructions
  1. Preheat oven to 375 F

  2. Blend the sugars and butter until soft and creamy.

  3. Mix the extracts and egg into the butter and sugar mixture until thoroughly mixed

  4. Mix the dry ingredients into the previous mix until well mixed and firm.

  5. Crush candy canes - about 1/2 - 1 cup crushed. I break mine up in a food processor, though it makes a lot of dust too.

  6. Mix the candy cane pieces into the dough. If there is a lot of powder this may make the dough dry, so add a tiny amount of water if needed.

  7. Lay parchment paper over cookie sheets and roll out balls of cookie dough, I do roughly 1 inch balls, you can do more or less depending on the size of the cookie you want. Keep the balls far apart as they will spread a lot.

  8. Press the balls flat and then put in the oven for 9-11 minutes, until golden brown. Longer if you like them really crispy, shorter if you want them softer.

  9. Allow the cookies to fully cool on the sheets before transferring them off or the will fall apart
