Super easy quesadilla with pizza inside!

Ingredients
  • 4 large flour tortillas
  • 3-1/4 cups prepared spaghetti or pizza sauce
  • 4 cups shredded mozzarella
  • 1-1/8 cup parmesan cheese
  • Pepperoni and black olives
  • any other "toppings" you want
Instructions
  1. Spread about 2 to 3 Tablespoons of sauce on 1/2 of each of the tortillas.

    Add about 1/8 cup of the parmesan.

  2. Put the sauce in a pan and heat it on low. You'll need about 2/3 of a cup per quesadilla.

  3. Evenly lay about 1 cup of mozzarella cheese over the sauce.

  4. Add pepperoni, olives and any other pizza toppings you like on top of the cheese.

  5. Fold the tortilla in half. Set on a baking sheet while you prepare the rest of the tortillas.

  6. Heat a heavy griddle on medium to medium-low heat. Lay the pizza-dillas on the hot griddle and cook for about 4 to 5 minutes on each side - or until the cheese is melted and the tortillas are lightly browned.

  7. Lay the hot tortillas on a sheet and sprinkle with parmesan. Let them sit for a few minutes.

  8. Cut them in half and serve with warm sauce. Enjoy as a snack or serve with salad and make a meal of them!
