Grilled Shrimp with Mango Salsa

An easy and delicious dish that can be served hot or cold - as an appetizer or main dish!

Ingredients
Salsa
  • 1 cup small cubed mango (about one mango)
  • 1/4 cup chopped fresh pineapple
  • 1/3 cup diced sweet red pepper
  • 1/4 cup diced white onion
  • 1 teaspoon finely minced jalapeño 
  • 1 Tablespoon fresh lime juice
  • 1/4 cup chopped cilantro
  • 1 Tablespoon olive oil
  • 1 teaspoon honey
Shrimp
  • 24 small to medium shrimp - peeled and deveined
  • sea salt
  • lemon pepper
  • 1 large lime, juiced
  • chive stalks for garnish
Instructions
Salsa
  1. Make the salsa first.

  2. Peel the mango and cut it carefully away from the seed.

  3. After prepping all the ingredients, put them together in a medium bowl and gently mix together.

  4. Cover and refrigerate until ready to use - but no longer than about 24 hours.

Shrimp
  1. Place each shrimp carefully onto skewers.

  2. Squeeze the lime juice evenly over each piece. Generously sprinkle lemon pepper and sea salt on both sides.

  3. Heat the grill to medium high and cook the shrimp over the direct heat, about 3 minutes on each side. Be careful not to over cook - it will get rubbery.

  4. Serve the grilled shrimp with the mango salsa and some chive stems. Can be served hot or cold.
