Grandma's Blueberry Kuchen

Grandma loved to bake. This delicious German cake is one of my favorites and it will be one of yours too!

Ingredients
  • 1-1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1-1/4 cup sugar
  • 1/4 cup softened shortening (or butter)
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1-1/2 teaspoon grated lemon peel
  • 1 large egg
  • 1 cup fresh blueberries
Instructions
  1. Preheat the oven to 350°.

  2. Start by sifting together all the dry ingredients. Put the flour, baking powder, salt and 3/4 cup of sugar into a wire strainer and sift the ingredients into a large bowl.

  3. Add the shortening (I used butter), milk, vanilla and 1/2 teaspoon of grated lemon peel. Beat with an electric mixer on medium speed for three minutes.

  4. Add the egg and continue to beat for 2 more minutes.

  5. Pour the batter into a greased 8X8X2 inch pan.

  6. Gently stir the blueberries with the remaining sugar and lemon peel. Spread evenly over the top of the batter.

  7. Bake for 40 to 45 minutes or until it's lightly browned.

  8. Allow to cool slightly before cutting into squares and serving.
