Chicken Scampi

Scampi is a Shrimp dish of shrimp made with a lemony garlic and butter sauce. No shrimp? Here is my version of scampi but using what I had in the freezer - chicken breast!

Ingredients
  • 3 Tablespoons olive oil
  • 4 cloves fresh garlic, minced
  • 1 Tablespoon minced shallot
  • 1/2 teaspoon salt
  • 1 pound chicken breast
  • 1/8 cup chicken broth or dry white wine
  • 1/2 cup butter
  • 1/8 teaspoon red pepper flakes
  • 3 Tablespoons minced fresh parsley1/8 cup parm plus some for garnish 8 oz dry fettucini 
  • 8 oz dry fettucini (cook in salted water - do not rinse)
  • 4 Tablespoons minced parsley
  • 1/4 cup fresh grated parmesan
  • butter or olive oil for pasta
Instructions
  1. Cook the pasta in salted water and drain - do not rinse! Toss it lightly with butter or olive oil

  2. Cut the chicken into shrimp sized pieces.

  3. Heat the olive oil in a heavy skillet and gently sauté the garlic and the shallots. Add the salt. As they begin to soften and become fragrant,

  4. As they begin to soften and become fragrant, add the chicken and continue cooking until the chicken is starting to cook through. Add the broth (or wine) and simmer gently.

  5. When most of the liquid has evaporated, add the butter and allow it to melt, then gently simmer the chicken.

  6. As the butter starts to lightly brown, stir in the lemon juice and pepper flakes.

  7. Serve hot over pasta and garnish with parsley and parmesan. Easy and delicious!
