Tater Tot Breakfast Casserole

Yesterday was National Tater Tot day – and I missed it! BUT I didn’t miss a great tater tot dish!

Tater tots were invented in 1953 by Ore-Ida (Oregon-Idaho). They were made popular by Sonic Drive-thru and they are still going strong. Did you know Americans eat more than 70 million pounds of these wonders?

Well, everyone has had the hamburger tater tot casserole, or some version of it. Here is a really delicious breakfast [8] version. Easy to make and even easier to eat!

Here’s How You Do it:

Preheat the oven to 350°.

First, brown the sausage.

Lightly oil an 8X8 casserole dish, lay half the tater tots on the bottom. Top with half the sausage and 1/3 of the cheese.

Lay down a second layer.

Place the eggs, milk, lemon pepper and garlic salt in a bowl and whisk it all together.

Pour the mixture over the tater tots and top with the remaining cheese.

Next, bake the casserole for about 30 to 40 minutes. The top will be brown and bubbling and the eggs cooked through when it’s done!

Remove from the oven and allow to rest for five to ten minutes.

Serve hot! Make it a meal with a side of fresh fruit.

  • 1/2 pound bulk pork breakfast sausage
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/8 cup milk
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon garlic salt
