These burritos are so easy to make and can be made ahead and frozen! This recipe calls for three ingredients, but you can add anything that sounds good to you!
What’s in these burritos?
The tortilla is filled with delicious Mexican chorizo, eggs and cheese. I used beef chorizo, but pork or soy work just as well! I’ve used soy chorizo before and even my carnivore husband liked them. Add some cheese, roll and go.
You can also add tomatoes, avocado (don’t suggest freezing), onions, salsa, jalapeño and whatever sounds good to you! And it’s all rolled up in a tortilla.
I used a small, flour tortilla, but if you get really hungry, a burritos sized is perfect! You can also used whole wheat or a flavored wrap, like tomato or spinach.
Whatever you put in it, these burritos, when made ahead, are so great for a quick, on the run breakfast.
Making the burritos
Cook the chorizo first. Cook it on low until the fat renders out. Add the potatoes and stir, continuing to cook until the liquid begins to evaporate.
While it’s cooking, mix the eggs, hot sauce, salt and pepper with a wire whisk.
When the meat is ready, push it all to one side of the pan, then pour the eggs in next to it. Top with the cheese.
Let them cook for a minute or two, then turn them and break it into pieces.
While the cheese is melting, warm the tortilla either in the microwave for about 30 seconds or on a hot griddle.
Lay it on a flat surface. If you want more cheese, add it to the tortilla.
Place some of the chorizo in the center and
top it with the eggs and cheese mixture. At this time you can also add the extras.
Tuck one end of the burritos over the fillings, then roll the sides until the whole this is tight. If you’re eating it now, top with some salsa and cilantro – or just grab and go!
You can now freeze it or enjoy it!! That’s it!

- 4 medium flour tortillas
- 5 large eggs
- 1 10oz. pkg Mexican chorizo
- 1/2 cup precooked (or leftover) potatoes, diced
- 1 cup shredded extra sharp cheddar (you get more flavor with less cheese with extra sharp)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon lemon pepper
- 1 teaspoon hot sauce (like Tapatio or Tabasco)
- Any additional fillings you want
