More smoked salmon! I love tuna sandwiches, but tuna has a high risk of contaminants like mercury. So I tried it with smoked salmon instead – and here is what I got – pure deliciousness!
What You Need:
- 2 ½ oz. smoked salmon (I used chinook)
- 2 Tablespoons finely chopped onions
- 1 Tablespoons capers
- 1 Tablespoon light mayonnaise
- ¼ teaspoon lemon pepper
- 1 low fat tortilla wrap
- Lettuce leaves
How to Do it:
Cut up and crumble the salmon in a bowl. Mix in the onions, capers, mayonnaise and lemon pepper. Chill.
Put the salmon mix on the center of a tortilla in a line.
Add some lettuce leaves on top and wrap, folding one end over then rolling.

LOL – thanks Marilyn!
What a great idea – my son has decided he doesn’t like tuna, so this might work instead. Thanks for sharing at Fiesta Friday.
Hope he likes it – and thanks for stopping by!
