We love shrimp at our house. It cooks fast, tastes like a treat, and right now is a lot cheaper than beef! This shrimp recipe is so easy you can make it on a week night. And it tastes delicious! It’s made with many things you probably already have on hand. I used Linguine pasta, but yu can use what you have! Give it a try – I think you’ll want to save this recipe!
Here’s How to Do it:
Mix the spices and stir to blend. Set aside. You can make extra and store it in an air tight jar for the next time you make the dish!
Cook the linguine and add just a little olive oil to keep it from sticking together. Mix well. I used linguine, but fettuccini or spaghetti works great too. You could even use plain ol’ egg noodles! As long as they are long and flat (or skinny).
Heat a heavy skillet over medium-high heat, then add 2 Tablespoons of olive oil.
Add the shrimp and gently sauté. Watch them. You don’t want to over cook them.
When it just starts to turn pink, add the spices and stir.
Cook gently to bloom the spices, then add the tomatoes and tomato sauce. Keep stirring.
Simmer lightly, until the tomatoes are hot and the shrimp is done (be careful not to over-cook). Usually about 5 minutes. They will be tender, but not rubbery. Pinkish white and not translucent.
Add some fresh basil and stir. Top the pasta with the sauce and a little more basil, and enjoy! It’s that simple!
