Scotch Egg Meatloaf

A New Look to Meatloaf!

One of my favorite treats when we go to a pub is a scotch egg [8]. If you don’t know what a scotch egg is, it’s a hard boiled egg surrounded by pork sausage and breadcrumbs, then fried until it’s cooked through. Serve it up with hot mustard.

I wanted something like that that wasn’t fried and that was easier to make – And this was perfect. A Scotch Egg Meatloaf! Just ask my husband!

Here’s How to Make the Meatloaf:

First, mix the sausage with the sage, garlic powder, and 2 Tablespoons of the bread crumbs using your hands to mix it well. Using your hands really does get things mixed up better. But make sure to wash them before and after you do this.

Next, lightly oil a loaf pan, then spread about 1/4 cup of the breadcrumbs in the bottom. Use half of the sausage mixture and push it into the pan forming a little bit of a well in the center. Sprinkle the dehydrated onions evenly in the well.

Gently roll the eggs in the flour to lightly coat them, then place them evenly down the center of the loaf.

Now, put the last of the sausage mixture on a board and flatten it.

Lift it carefully and lay it on top of the eggs. Gently press down to make sure there are no air pockets and the eggs are sealed in.

Using the remaining bread crumbs, sprinkle over the top and gently push around the sides. You need to form a tight meatloaf.

Be sure to preheat the oven, then bake at 350° for about 35 to 45 minutes, or until it is brown on the top and the sausage is cooked through.

Make the sauce by mixing all the sauce ingredients together.

While you allow the meatloaf to rest, crisp up the sage, then turn out on a plate,

slice and serve with the sauce and garnished with crispy sage leaves.

To make the sage leaf garnish, heat some oil in a shallow pan. Place the leaves in the hot oil and fry until they are crispy. Be careful, they burn quick!

It can be your main course, or the slices can be appetizers for your next party! Delicious either way.

Ingredients
  • 1 pound pork breakfast sausage
  • 1/2 teaspoon garlic powder

  • 3 whole Hard boiled eggs
Sauce
  • 1/2 cup dijon mustard
  • 3 Tablespoons heavy cream
  • 1 Tablespoon honey
  • 1 teaspoon worcestershire
Fried Sage Leaves
  • 3 -4 fresh, whole sage leaves
  • oil to fry
