Chicken Scampi

Today is National Shrimp Scampi day. But in these days of captivity, I don’t go shopping very often and we had no shrimp. BUT – we did have some chicken breast. Shrimp and chicken both have a very delicate flavor so I interchanged them!

But what is scampi? Scampi actually refers to a large shrimp or a prawn. So shrimp scampi is sort of like saying Chai tea – the terms are the same thing.

Scampi is also a dish of shrimp made with a lemony garlic and butter sauce. So here is my version of scampi but using what I had in the freezer – chicken breast!

Here’s How to Do it:

Cook the pasta in salted water and drain – do not rinse! Toss lightly with a little butter or olive oil.

Cut the chicken into shrimp sized pieces.

Heat the olive oil in a heavy skillet and gently sauté the garlic and the shallots. As they begin to soften and become fragrant,

add the chicken. Continue cooking until the chicken is starting to cook through. Add the broth (or wine) and simmer gently.

When most of the liquid has evaporated, add the butter and allow it to melt, then gently simmer the chicken.

When the butter starts to lightly brown, stir in the lemon juice and pepper flakes.

Serve hot over pasta and garnish with parsley and parmesan.
