Roasted Parmesan Brussels Sprouts

I love Brussels sprouts and I’m always looking for new ways to prepare and serve them.  I had some other vegetables at a restaurant that had parmesan topping on it and I thought, why not those sprouts!!  So here they are…

What you need:

  • 4 cups of fresh Brussels sprouts
  • ¼ cup butter
  • 1 Tablespoon smoked paprika
  • ¼ cup panko bread crumbs
  • ¼ cup parmesan (the kind in the can)
  • Cooking spray

 

How to Do it:

Clean the Brussels sprouts and cut them in half lengthwise.  Spray a heavy skillet (like cast iron) with a little cooking spray and brown the sprouts on the cut side.  Salt to taste at this point.

 

 

 

 

 

Place the sprouts in a baking dish.

Mix the panko and parmesan and spread evenly over the top.

Melt the butter and stir in the paprika.  Pour the butter mixture evenly over the bread crumbs.

Bake at 350 degrees for about 30 minutes, or until the bread crumbs are brown and bubbling.

Makes 4 servings
