There are so many great varieties of apples available and so many things you can do with them (as well as just enjoy the sweet fruit!)
This recipe uses the tart granny smith and mixes it with sweet dates….
What you need:
CHUTNEY
- 1 large tart apple, like a granny smith, chopped (about 1 cup)
- 1 large sweet onion, chopped
- ½ cup deglet noor dates, chopped
- ½ cup chopped walnuts
- ¼ cup dry red wine
- ½ cup white balsamic vinegar or white wine vinegar
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground cloves
CHICKEN
- 8 Chicken thighs
- 1 sweet onion
- 6-8 cloves of garlic
- Sea salt
- Lemon Pepper
- Olive oil  (I used a lemon infused oil – works great on veggies too!)
How to Do it:
First prepare the chutney. Place all the chopped apples, onion, dates, nuts and spices in a small sauce pan.Â
Pour the wine and vinegar over the top. Bring to a boil, then reduce heat and simmer until the apples are soft and the liquid has been evaporated. Set aside to cool. (May be served hot or cold)
For the chicken, slice the onion and place in a layer in the bottom of a baking pan. Peel the garlic and spread evenly on top of the onions. Sprinkle with olive oil.
Place the chicken thighs, skin side up, on top of the onions and garlic. Sprinkle lightly with olive oil, sea salt and lemon pepper.
Bake at 350 degrees for about 40-50 minutes, or until the skin is crispy and the chicken has no pink left inside.
Serve with onions on top the chutney on the side.
