Roasted Cabbage Steaks

I’m always looking for new ways to make vegetables. I love them. My husband, not so much. But I actually got him to try this cabbage! And he liked it!! We had it served like this with the corned beef this year.

Corned beef is traditionally prepared as a boiled dinner, everything in one pot. But at my house no one but me will eat the cabbage that way, so this year I got creative – and it worked!! You can roast the rest of your meal at the same time and it’s really delicious!

Here’s How to Roast some Cabbage:

 Preheat the oven to 350°

Slice the cabbage into 1/2 inch to 3/4 inch thick slices. I prefer the thicker slices. They will have a little more body when cooked. Thinner slices will break up easier when served.

Sprinkle some olive oil in the bottom of a large baking dish.

Place the slices in a single layer in the pan. I only made two (for the two of us), but this recipe is for four – you can make as many servings as you have slices!

Drizzle a little more oil over the cabbage and add salt and pepper to both sides. I prefer a small amount of salt and lots of fresh cracked pepper. You can put on according to your personal preference.

Slice the white part of the leek into 1/4 inch slices. Lay them over the cabbage slices with just a little bit more olive oil.

Place in the oven and bake for about 10 minutes. Gently turn the cabbage slices and return to the oven until the cabbage is soft.

Meanwhile, mix the horseradish with the dressing. Warm it up slightly.

Serve the steaks with leeks on top and some warm dressing over the works.

  • 1 medium head of green cabbage
  • 1 to 2 leeks, white part only
  • olive oil
  • fresh ground pepper
  • sea salt
  • 1 cup Thousand Island Dressing
  • 1/2 teaspoon horseradish
Instructions
  1. Preheat the oven to 350°

    I used to make a whole boiled dinner too but found that my family much prefers the potatoes and the carrots roasted. I never thought of roasting the cabbage; that is genius!
