Quick, Homemade Macaroni and Cheese

Craving comfort food but homemade takes so much time and work?  Not this comfort food!  The most time is spent baking it in the oven.  You can even make it the night before and bake it the day of!  And it’s delicious –  cheesy, creamy, smooth and belly warming –  Check it out!

What you need:

How to Do it:

Bring 2-3 quarts of water to a boil and add 1 teaspoon of salt.  Cook the pasta until it is al dente – or soft but still firm.

Drain the pasta and leave in strainer.

Add the butter and cream cheese to the sauce pan.  Heat, stirring, until it starts to melt together.  Return the pasta to the pan and stir until the cream cheese and butter are melted and well mixed into the pasta.  Add the milk and stir.  Gently stir in all the cheese except about ½ cup for the top.  Make sure it is evenly distributed.

Pour the mixture into a baking dish and top with the remaining cheese.

Bake at 350 degrees for about 20 minutes.   Turn the oven to broil and broil the top until it is golden brown (about 5 minutes).  Serve piping hot.

I love Macaroni and Cheese with pork chops.  Using garlic salt, pepper and some sage – cook on medium-high until golden and cooked through. If you use a grill pan you get great grill marks and less fat.  Serve with a veggie and you have dinner!
