We’ve been eating a lot of quesadillas lately. And we’ve been trying them differents ways. This one has to be our favorite – pizza in a quesadilla! Thirty minutes and it’s dinner!
Here’s how you do it:
These are so easy to prepare.
Spread about 2 to 3 Tablespoons of sauce on 1/2 of each of the tortillas. Add about 1/8 cup of the parmesan.
Put the sauce in a pan and heat it on low. You’ll need about 2/3 of a cup per quesadilla.
Evenly lay about 1 cup of mozzarella cheese over the sauce.
Add pepperoni, olives and any other pizza toppings you like on top of the cheese.
Fold the tortilla in half. Set on a baking sheet while you prepare the rest of the tortillas.
Heat a heavy griddle on medium to medium-low heat. Lay the pizza-dillas on the hot griddle and cook for about 4 to 5 minutes on each side –
or until the cheese is melted and the tortillas are lightly browned.
Lay the hot tortillas on a sheet and sprinkle with parmesan. Let them sit for a few minutes.
Cut them in half and
serve with warm sauce. Enjoy as a snack or serve with salad and make a meal of them!

- 4 cups shredded mozzarella

- Pepperoni and black olives
- any other "toppings" you want

We loved your pizzadillas recipe. Love that’s somewhere between a pizza and quesadilla and so easy to make. Very creative!
Genius! Can I say that these are pretty much the ultimate crossover food? The best of Italian American and Mexican. Plus, they’re so easy to make the kids can make their own after school snacks.
