Parmesan Potatoes – Baked and Mashed to Goodness!

We love twice baked potatoes – and we love mashed potatoes.  Here is a bit of a combo.  Bake them first, then mash them – deliciously easy!

What you need:

  • 3 large baked potatoes (or 4 smaller ones)
  • 1 clove garlic
  • Pinch of salt
  • 3 Tablespoons butter, melted
  • 2 Tablespoons sour cream
  • ¼ cup dried parmesan cheese (the kind in the can)

How to Do it:

Scoop the meat out of the potatoes and put into a small sauce pan.  Pour the butter over the top and mash.  Mix in all the remaining ingredients and heat through.  Serve hot!

Makes 4 servings.
