We love twice baked potatoes – and we love mashed potatoes. Here is a bit of a combo. Bake them first, then mash them – deliciously easy!
What you need:
- 3 large baked potatoes (or 4 smaller ones)
- 1 clove garlic
- Pinch of salt
- 3 Tablespoons butter, melted
- 2 Tablespoons sour cream
- ¼ cup dried parmesan cheese (the kind in the can)
How to Do it:
Scoop the meat out of the potatoes and put into a small sauce pan. Pour the butter over the top and mash. Mix in all the remaining ingredients and heat through. Serve hot!
Makes 4 servings.
