National Spaghetti Day (A Day Late) – Brown Garlic Spaghetti

Yesterday was National Spaghetti day and this post was supposed to go out yesterday. Unfortunately, as some of you may have noticed, I had a little trouble. There was a “template” post that was posted, twice, in error. I gave up – SO – today is National Spaghetti Day a Day Late!

So what is Spaghetti Day? Many people immediately think of that rich red tomato sauce packed with herbs and garlic with or without meatballs as spaghetti. But spaghetti refers to the pasta. Those long, skinny string like noodles that we use with that sauce. And today is the day to celebrate this versatile ingredient.

But spaghetti isn’t just Italian! Those long stringy noodles were eaten all over Europe and Asia and served with a traditional sauce or broth.

Here is an easy, bursting with flavor side dish of spaghetti and garlic.

Here’s How to Do it:

Start by cooking the pasta according to the package instructions. When you drain it, make sure you save some for the sauce!

 

 

 

 

Prepare the herbs and garlic while it’s cooking.

Heat the oil in a heavy skillet. Add the garlic and cook on medium until the garlic begins to brown lightly.

Add the herbs and stir. Simmer just a couple minutes longer.

Add the butter and continue to cook, stirring frequently, until the butter starts to brown a little.

Turn off the heat and stir in 2 Tablespoons of pasta water. Add salt and pepper to taste.

Serve hot topped with fresh grated parmesan cheese.

Ingredients
  • 3 cups cooked spaghetti
  • 1/8 cup high quality olive oil
  • 2 Tablespoons fresh garlic thinly sliced
  • 1 teaspoon minced fresh sage
  • 1 Tablespoon minced fresh rosemary
  • 1 teaspoon minced fresh flat leaf parsley
  • 1 Tablespoon butter
  • 2 Tablespoon salted water from cooking the pasta
  • Salt and pepper to taste
  • Fresh grated parmesan for garnish
Instructions
