Did you know today was National Hot & Spicy Food Day? They say that man has eaten spicy foods for more than 6,000 years! Many cultures throughout the world use those sweat producing spices in their dishes. And they say that spicy foods speed up the metabolism, keeps cancer at bay, helps with cardio-vascular health and clears your mind. This unofficial holiday celebrates the tradition!
Here is a breakfast to celebrate the day – easier than you think and delicious!
What you need:
- 6 chile corn tortillas (click here for the recipe) [1]
- 2 cans of chopped tomatoes with green chiles
- 1 teaspoon cumin
- 2 Tablespoons chili powder
- 1 teaspoon cayenne pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 4 Tablespoons chopped onion
- 6 eggs
- 6 slices of pepper jack cheese
How to Do it:
Heat the tomatoes and the spices in a large skillet, simmering until some of the liquid has evaporated.
Break the eggs into the tomatoes and cook until all the white has set. You can carefully turn them with a spatula or spoon the hot liquid over the top to cook the white.
Heat the tortillas
Place one tortilla on a plate. Top with one slice of cheese,
one egg, and 1/6 of the tomato mixture.
Breakfast is served!
