Mushrooms and Pork in Garlic Butter

Four of my favorite ingredients – pork, mushrooms, butter and garlic – all mixed together to tantalize your taste buds! Although it does take some time to slowly simmer the pork into tenderness, this dish is easy and tastes delicious with just about anything. Try it with quinoa and a salad!

Here’s How to Do it:

Cut the pork into 1 to 1-1/2 inch cubes. The smaller the cubes, the faster they will cook.

Using a heavy skillet, heat the oil, then brown the pork on all sides.

Add 1/4 cup of butter to the pan and continue cooking.

When the butter is fully melted, add the garlic and mushrooms and sauté until the mushrooms are starting to sweat. Stir frequently.

Stir in the broth and reduce heat to a simmer.

Cover and continue to cook for about an hour or until the pork is fork tender.

When the pork is done, uncover and bring to a boil.

Reduce heat to low and add the yogurt and remaining butter. Continue to simmer gently, stirring often, until the sauce is thickened.

Serve hot with pasta or grains like rice, quinoa, or barley.
