Meatless Sausage Casserole

As simple as it is cheap to prepare, this is actually one of the easiest dishes to make meatless due to the abundance of great plant-based sausages available from companies like No Evil Foods. So, if you’re looking for a simple and satisfying dish for your next meatless Monday dinner, this could be it.

This particular meatless sausage casserole recipe has a little spice, which gives it that extra kick that meatless recipes often need to really make them stand out, but you can make it a little blander if you prefer.

As well as having a great kick, a portion also comes in at under 500 calories, which makes it a great choice for anyone who is looking to lose a little weight, or maintain a healthy weight right now. 

Try to choose meatless sausages that have a high protein content to make this recipe even healthier and even more filling than it already is.

What you need:

  • 1 onion, sliced
  • 2 large Romano peppers, seeds removed and roughly sliced
  • 1 tbsp extra virgin olive oil
  • 3-4 tsp smoked paprika
  • ¼ tsp dried red chili flakes
  • 1-¼ tbsp fresh rosemary, roughly chopped
  • 3 cloves garlic, minced
  • 28 oz. chopped tomatoes (canned or fresh is fine)
  • ¼ cup red wine (optional)
  • â…“ cup water
  • 14 oz. canned butterbeans (lima beans), rinsed and drained
  • 1 bay leaf
  • 1 tbsp parsley
  • Fresh thyme, one bunch
  • 6 meat-free sausages
  • ½ tsp salt ( I use sea salt) 
  • ¼ tsp black pepper + extra for serving

Here’s how you do it:

  1. Heat oil in a casserole dish. Throw in all of the onions and the salt and simmer over a low heat until the onions are soft and slightly caramelized (this is really important to add flavor). 
  2. Turn the cooker up to a medium heat and add the rosemary, smoked paprika, and chili flakes. Cook for 60-90 seconds, then throw in the garlic and cook for a further 60 seconds or so.
  3. Add the wine, stir and allow to fully reduce before throwing in the tomatoes.
  4. Add the beans, peppers, bay leaf, salt, pepper, and thyme. Stir it all together then cover with casserole dish lid and turn the heat down to a simmer. Cook for 10 minutes.
  5. While you’re simmering your sauce, cook your meat-free sausages in a small amount of extra virgin olive oil. If your brand can be grilled, then it’s fine to do that too.
  6. Remove cooked sausages from pan or grill, blot away any excess oil and cut each sausage in half down the middle.
  7. Add sausages to sauce and leave the lid off. Turn the heat back up to medium and allow the casserole to reduce for roughly 10-15 minutes. Once it’s reached a consistency you like, add the parsley and serve.
  8. Be sure to add a little extra black pepper to the dish once it’s served to really bring out the flavor.

Serve with mashed potatoes for a really hearty meal!
