meatless monday

This week we had a delicious, vegetarian (these are not vegan) meatballs in a creamy sauce over noodles.

There are many different premade meatless meatballs. I used Beyond Meatballs Italian style. Morning Star Farms and Quorn also have some really good options.

Here’s How to Do it:

Start by cooking the onions and browning the meatballs.

Heat the olive oil and butter in a heavy sauce pan. Stir in the onions and cook for about s2 minutes.

Carefully add the meatballs, turning once, to brown on both sides.

Stir in the mushroom soup and milk, gently mixing them. Let them simmer on low, covered, for about 5 minutes. You want to heat them all the way through.

Stir in all the spices and simmer gently, uncovered, while the noodles cook.

Just before serving, stir in the sour cream.

Serve hot over noodles and topped with some parmesan and dried, spicy oregano (regular works if you can’t find spicy. I grew mine).  So easy and so delicious!

There are a lot of meat alternatives that are plant based. They used to be more expensive than beef, but not anymore! The sausage is pretty good too! Thanks for stopping by.
