It’s National Cherry Popsicle Day!

Cherry Popsicle. I remember always wanting the red one. It was sweet and cool and delicious. Well did you know there is a day to celebrate this wonder?

The origin of the popsicle goes back to the early 1900s. An eleven year old kid named Epperson was experimenting with flavors for soda and left the mixture outdoors. It froze overnight producing frozen fruit flavored ice. This borne the idea of the frozen treats on a stick. Marketed in 1923 and the rest is history.

Although the word popsicle is actually a brand name for these treats – but it’s become the word that refers to any frozen fruit juice. And they are really easy to make!

Here is a recipe for a popsicle made with fresh cherries. Sweet and tart and wonderfully delicious.

Here’s How to Do it:

Pit the cherries. Here’s an easy way.

Find a jar or vase that has a neck narrow enough to hold a cherry, but wide enough to drop the pit.

 

 

 

 

 

Using the dull end of a bamboo skewer, gently poke the stem hole to move the cherry.

Set the cherry on the vase, stem side down.

Push the dull end through the bottom giving it gentle pressure,

until you feel the pit pop out.

When your finished, empty the vase of pits in the trash!

Now put those cherries with all the other ingredients into a sauce pan.

Bring it to a boil and mash the cherries with the back of a spoon. Turn the heat to low and simmer until the mixture is syrupy.

Let them cool a little, then pour the cherries into a blender and puree on high.

Pour the mixture evenly into 8 popsicle molds.

Freeze until solid – at least 6 hours.

Fresh Cherry Popsicles

Just three ingredients makes an easy, refreshing summer snack.

Ingredients
  • 1 cups fresh, pitted cherries,
  • 1/2 cup sugar
  • 1-1/4 cup water
Instructions
  1. Place all the ingredients in a sauce pan and bring to a boil.

  2. Reduce heat and simmer, smashing the cherries with the back of a spoon.

  3. When the consistency is like syrup, turn the heat off and allow to cool.

  4. Pour the cherries and the syrup into a blend and puree on high until the mixture is fairly smooth and well blended.

  5. Pour evenly into popsicle molds and freeze until solid - at least 6 hours.

  6. Carefully release from the mold and enjoy!
