Ice Cream Sandwich Bites

Staying with the small bite desserts, how about cookies and ice cream and just a bite or two?  Well then, today’s treat is:

How does chocolate and cherry chip sound?  Or chocolate dipped?  Better yet, Peanut Butter and Jelly?  Want more? Read on….

First – how about the Peanut Butter and Jelly Ice cream sandwich bites?

What you need:

How to Do it:

Put the white sugar and the butter in a food processor with a blade and process until smooth.

Add the brown sugar and the egg.  Run through again.

Add the dry ingredients and process until a ball forms.

 

Add the peanut butter (I use natural and it separates, so there is more oil in it than the regular brands).  Process until a smooth dough forms.

Place dough in small balls on a parchment lined cookie sheet – about 1 inch each in size.

Press down with a fork.

Bake at 325 degrees for about 8-10 minutes – until the edges begin to brown slightly.  Remove from heat and allow to cool.

Makes about 24 cookies

On ½ of the cookies (about 12), spread about 1 Tablespoon of grape jelly.  Place the cookies in the freezer for about an hour so the jelly sets.

Remove from the freezer and top the jelly with about 1 ½ to 2 tablespoons of vanilla ice cream  20160324-IMG_5713 [9]

and another cookie.  You now have a PBJ ice cream sandwich bite.

Repeat with the remaining cookies.

Makes about 12 ice cream sandwich bites!

 

And how about some super easy chocolate chip bites?

Start with refrigerator dough to make the cookies –

How to Do it:

Open the package of cookie dough and make little dough balls using half of each “cookie”.  So instead of one large cookie, you will have two small cookies.  The dough balls should be about 1 inch.

Press each ball gently in the center and bake at 350 degrees for about 5 minutes, until the edges begin to brown lightly.

Remove from heat and allow to cool completely!

Place 1 ½ to 2 Tablespoons of softened ice cream on half of the cookies (about 12).  Top with a second cookie and place in the freezer to set.

If you want to have chocolate dipped sandwiches, melt the chocolate chips in the microwave, watching carefully so they don’t burn.  Make sure the ice cream has refrozen before you start.  Dip each cookie half way into the chocolate and place on wax paper.  Return to the freezer for the ice cream to set.
