Grilled Silver Salmon with Orzo and Lemon Garlic Butter Sauce

It’s grill season! And what better way to kick it off than with a beautiful silver salmon fillet.

What is Silver Salmon?

Also known as a Coho salmon, it is a milder, sweeter fish than the king, or Chinook, salmon (which truly is the king of salmon). This semi – firm fish has less fat than other salmons, which give it a milder, less fish flavor. It’s a beautiful fish for simple preparation and great on the grill.

Making the Salmon

Start by washing and drying the herbs. Slice the lemons about 1/8″ thick.

This is a good time to start the salted water for the orzo. Add the butter and three lemon slices to the water and bring to a boil.

When the pasta water is boiling, stir in the orzo and cook until done. Drain but do not rinse and remove the lemon slices.

Lightly sprinkle salt and fresh cracked pepper on both sides of the salmon.

Wipe the grill with olive oil. Heat on high with the lid down for about 15 minutes.

Lay the herbs and lemon slices on the flesh side of the fillets.

Gently lay them on the hot grill, skin side down, and reduce heat to low.

Cover and cook about 10 to 15 minutes, or until the salmon flakes with a fork.

Remove the charred herbs and lemon slices before serving.

Once the salmon is on the grill, melt the butter in a small saucepan.

Add the garlic and cook on low gently until the garlic is soft and the butter flavored.

Stir in the lemon juice, then add salt and pepper to taste.

Just before serving, add the cream and whisk to blend well. Stir in 1/2 the chives.

Serve the salmon on top of or right next to the orzo. Top with the sauce and remaining chives. Pull the flowers apart and sprinkle on top of the dish.

Serve hot!

Ingredients
  • 4 medium to large Silver Salmon Fillets
  • 4 large sprigs each rosemary, thyme, parsley, chives
  • 1/2 large lemon, sliced 1/8" thick
  • fresh cracked pepper
  • sea salt
Sauce
  • 1/2 cup butter
  • 2 Tablespoon fresh squeezed lemon juice
  • 2 cloves garlic, crushed
  • 1/4 cup heavy cream
  • fresh cracked pepper and kosher salt to taste
  • 1-2 chive blossoms
Orzo
  • 3 tablespoons butter
  • 1 teaspoon kosher salt
  • 1 cup dry orzo

Silver salmon is also known as Coho salmon. This recipe will work for any salmon, but the silver is a milder flavor.
